I like to whip up a couple of batches on Sunday morning and freeze the leftovers for a quick breakfast during the week. Give these a try ASAP! They are sure to be a hit.

How to Make Sausage Pancake Muffins

These muffins are super easy to make with only a few simple ingredients. In a large bowl, whisk together milk, melted butter, egg, vanilla extract, and maple syrup. Stir in sugar, flour, baking powder, and salt. Spray a mini muffin tin with nonstick cooking spray or line muffin cups with paper liners. Spoon pancake mix into each muffin cup. Place a piece of link sausage into the center of each muffin. Bake in a preheated oven until golden brown.

    • If you don’t like sausage, you can substitute bacon, ham, blueberries, or strawberries.

  • ¾ cup milk
  • 2 Tbsp melted butter slightly cooled
  • 1 large egg
  • ½ tsp vanilla extract
  • 2 Tbsp maple syrup
  • 1 Tbsp sugar
  • 1 cup all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp salt
  • 6 precooked sausage links, each cut into 4 pieces
  • Preheat oven to 350ºF. Lightly grease mini muffin pans.

  • In a large mixing bowl, whisk together milk, butter, egg, vanilla, and maple syrup. Add sugar, flour, baking powder and salt.

  • Scoop 1 tablespoon of batter into each muffin cup. Place one slice of sausage link into the center of each muffin.

  • Bake for 10-12 minutes. Serve with butter and maple syrup.
