Andover’s Peruvian restaurant Esmeralda is sold out for the summer according to an Instagram post after an opening year filled with national media attention.
Chef JuanMa Calderon and his partner Maria Rondeau opened the restaurant in June 2021 in southern Vermont. Known for their ancient Peruvian style of cooking with stones in the ground and their intimate dinner party setting, the couple’s restaurant was named one of Esquire’s best new restaurants in America in 2021, was featured on CBS This Morning and in the New York Times Food section.
The restaurant is only open for Friday and Saturday dinners about two weekends a month from June through October this season. On Saturdays, they cook with the ancient Peruvian method called pachamanca, inviting their guests a few hours early to watch the process.
